If you’re craving something fresh and vibrant to get you through these winter days❄️, a homemade shrub might be just the ticket (and no, we aren’t talking about the plant!).
A shrub is a sweet-and-sour cocktail syrup, starring your favourite fruits and herbs.
Check out this basic recipe, and get creative with your favourite fruit-and-herb combos, such as citrus and rosemary, pear and thyme or blueberry and basil.
INGREDIENTS

4 cups peeled, chopped fruit (frozen or not) 🍋🍐🍓

2-3 sprigs of fresh herbs 🌿

1 cup raw honey 🍯

1/2 cup raw apple cider vinegar 🍎

2.5 oz Clever Gin
METHOD
In a large, dry mason jar, combine fruit, herbs and honey.
Mash with a muddler or wooden spoon. Cover the jar and refrigerate for 2-3 days. Shake the jar each day, if possible.
After the 2 or 3 day mark, pour the contents of the jar into a blender, pulse it a couple times and strain the liquid into a clean jar.
Add the apple cider vinegar, mix and cover, letting it sit for another 24 hours.
If using a metal lid, place parchment paper between the lid and the metal.
Add Clever Gin, top with soda water, Serve topped with ice. Add fresh herbs for garnish and enjoy ! 🍹
