A spice made from the seed pods of various plants in the ginger family, native to the Indian subcontinent and Indonesia.

A cross between watermint and spearmint, peppermint is an organic source for menthol, which slightly numbs nerve endings and makes the brain think it is cooling the mouth when you eat it.
Flavours: slightly spicier than spearmint, and due to a higher concentration of menthol, the flavour of peppermint is more pronounced.

Spearmint

A perennial herb whose leaves and oil can be used in flavourings and medicines.
Flavours: delicate and fragrant, often described as sweet, with a softer flavour than peppermint.

Lime peels

The peel from the fruit sun-ripened.
Flavours: refreshing and more pronounced than lime juice, with a distinctly zesty flavour and a hint of bitterness.
